Add diced carrots and peppers to a large pot. Add a little water and simmer for approx. 2-3 minutes. Add the cooked chicken, Soy sauce and vegetable bouillon
Leave to simmer for a further 4-5 minutes
In separate pot cook the egg noodles in boiling water and drain
Add the drained noodles to the mix and stir in well
Sprinkle in the chopped parsley and spring onions and then serve
