Cook penne pasta, drain and refresh. Set oven to 200c/Gas Mark 6
In a pan add chopped tomatoes, vegetables, chilli and tomato puree. Bring mixture to the boil and allow to simmer for 20 minutes. Stir in dried basil and 150g mozzarella cheese
Pour tomato mixture over pasta, sprinkle with remaining mozzarella and put in oven for 20/25 minutes
